Super EASY Shredded Beef Wet Burritos

These shredded beef wet burritos are SUPER yummy!  This is a simple meal that you can throw in the crockpot before you head out the door, then you'll just have to assemble them when it's time to eat.  Or, you can simmer the meat on the stove.  I've done it both ways and they were delicious both ways :)

Once again my children LOVED this, Brayden even asked to have more for his bedtime snack :)

Super EASY Shredded Beef Wet Burritos
2lbs of beef stew meat
1 large can enchilada sauce (mild, medium, or hot) 19oz
2 beef bouillon cubes
1 can refried beans
5-7 burrito size tortillas
1 cup of cheese (shredded cheddar or colby jack)

Fast fry the meat.  For those that don't know what this means, heat up a pan, fairly hot, with oil.  Add meat to brown, for only about 5-8 minutes.  You only want to brown it, you're not trying to cook it.  At this point you can either keep it in this pan or throw it in the crockpot.  Add the bouillon cubes and enchilada sauce.  For the crockpot, cook on low for about 7 hours.  When I do it in a pan on the stove I cook it for about 3-4 hours, just slightly simmering.  Make sure that you leave the lid on.   When you are ready to serve, take meat out and shred.  Save sauce for putting over burritos.  Add beans to meat.  Put this mixture in shells and roll up like a burrito.  Put them in a greased 9x13 pan.  This should make 5-6 burritos.  Pour sauce over burritos and top with cheese.  Broil in the oven to melt the cheese.
